The ingredient of Date and cherry loaf cake

  1. 125g butter or margarine
  2. 250g sugar
  3. 2 extra large eggs
  4. 500g plain flour
  5. Pinch of salt
  6. 1 teaspoon baking powder
  7. 1 teaspoon bicarbonate of soda
  8. 100g red glace cherries, quartered
  9. 125g pitted dates, chopped
  10. 200ml natural yoghurt or sour milk
  11. 200ml orange juice
  12. 5g grated orange rind
  13. 200g sugar

The instruction how to make Date and cherry loaf cake

  1. Cream butter and sugar together. Beat eggs into mixture one at a time until light and creamy.
  2. Sift flour, salt, baking powder and bicarbonate of soda and add to egg mixture. Add fruit.
  3. Add the yoghurt, mix and place in a greased loaf or ring cake tin. Bake in a preheated oven at 180u00b0C for about 35-45 minutes.
  4. For syrup: Place all ingredients in a small saucepan, simmer for 5 minutes, pour over cake while still hot.
